Who we are

We’re a family managed cattle ranch, and we raise purebred Wagyu in the mountain pastures of Walden, Colorado. The pure mountain air and high quality pasture, combined with our Japanese Wagyu bloodlines and animal husbandry practices yield the highest-quality beef possible. Our cattle are raised in a low stress environment, and are never fed growth hormones or antibiotics.

Our Beef

Emma Farms Wagyu is known for its superior quality in taste, texture, flavor and tenderness. Our cuts are highly marbled with snowy white, monounsaturated fat that is high in oleic and linoleic acids, and Omega-3 and Omega-6 fatty acids.  This intramuscular marbling is what gives our beef its buttery texture, and mouth feel.

Tom Waldeck
As President of Emma Farms, Tom oversees all aspects of the business. He is both a brand visionary as well as a day-to-day rancher. Tom’s goal is to raise the healthiest, highest-quality Wagyu beef possible.
Robert McCormick
Sales & Marketing
Robert works directly with our restaurant partners, inspiring their culinary teams into finding new ways to integrate Wagyu onto menus. He has worked at some of the nation’s top restaurants, including the Daniel Boulud Brasserie at the Wynn Las Vegas, where he earned his first Michelin star. Robert came to Emma Farms from The Little Nell in Aspen, where he was executive chef for three years.
Christina Hall
Cattle Production
Christina oversees our entire ranching operation.  From birth to finishing the cattle, she ensures our high standards for quality and animal welfare are applied during each step of the way. A born- and -raised rancher, producing the high-quality beef is in her DNA.
Clayton Shonk
Ranch Manager
Clayton runs our day to day ranching operations in Walden, CO. A recent graduate of Colorado State University, Clayton understands the value of creating and maintaining a sustainable environment for our wagyu cattle to roam and graze.
